Deck count matters—but usually less than the paytable.
Players often focus on the number of decks. For the standard main wagers, moving from eight to ten decks changes the edge by only tiny fractions of a percentage point.

Published eight-deck figures are about 1.0579% house edge on Banker and 1.2351% on Player. A ten-deck analysis changes those to about 1.0591% and 1.2337% respectively.

What can matter more
Banker commission, a special no-commission rule, Tie payout and side-bet paytables can move expected value much more than a two-deck change. Deck count can have a larger effect on pair-style side bets than on the standard Banker/Player wagers.
